Simple Creamy Mushroom Chowder—Best Mushroom Soup Recipe without Cream

Previously, I posted a recipe for a clear mushroom soup, however, Ares always preferred creamy soup. But he worries that there's too much fat and calories in the heavy cream and coconut cream I've been using for creamy soups. So this time, I stole a page out of Hungarian recipes. This secret ingredient is not only lower in fat content, but made the soup much creamier than if I would have used anything else. This is the best mushroom soup recipe without cream you will try.
Best Mushroom Soup Recipe without Cream—Ingredients
- 1 tsp avocado oil
- 1 garlic clove minced
- 1/2 red onion finely diced
- 200g chicken breast cubed
- 150g carrots cut into small cubes
- 1/4 cup white wine
- 300g mushroom sliced
- 1 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup sour cream
- 4 cups water
- 1 cup milk
Best Mushroom Soup Recipe without Cream—Instructions
In a pot, turn on heat and add some avocado oil. Sauté the minced garlic but do not let it burn.
Add the red onions and sauté until translucent.
Place the chicken cubes on the bottom of the pan and sear each side but do not fully cook them.
Remove the chicken breast and put in the carrots. Sauté until the carrots are cooked and change in color.*
Add the white wine and scrape the bottom of the pot to deglaze.
Once the white wine reduces, add the mushroom slices.
Add salt and pepper then sauté until the mushrooms are lightly cooked and soften.
At this point, there should be a lot of juice and water at the bottom of the pan from the vegetables. Mix in the sour cream.
Add the water and milk. Mix well.
On medium-high heat, bring to a boil.*
Add the chicken and simmer covered on low-heat for 5 minutes. And it's ready to serve!

Make sure that you cook the carrots long enough for it to turn into a slightly duller orange so that they are semi-soft when the soup is done. The last thing we want is to taste hard crunchy chunks in our simple mushroom chowder recipe.
Watch the pot closely and lower the heat as soon as it boils. Though this a mushroom soup recipe without cream, the dairy from the sour cream and milk still froth when boiling, which could easily overflow.
